New Hampshire (Maple Syrup Pie)

This week in our study of the Northeastern states is New Hampshire. The capital of New Hampshire is Concord. Did you know that New Hampshire was the first colony to form a government independent of England? How about a tasty recipe to try...



New Hampshire Maple Syrup Pie

INGREDIENTS:
  • 1 cup Maple Syrup
  • 1 tsp Butter
  • 2 Egg whites
  • Pinch salt
  • Chopped Nuts
  • 1 cup Hot water
  • 3 tbsp Cornstarch
  • 2 Egg yolks
  • 1 Tbsp Maple syrup

PREPARATION:
  1. Combine syrup, hot water and butter in medium sauce pan, bring to a boil.
  2. Mix cornstarch, salt and cold water to make a thin paste. Add egg yolks and beat well.
  3. Add hot syrup mixture gradually (adult supervision), return to heat and cook stirring constantly until thickened.
  4. Cool slightly, and then pour into cooked pie shell.
  5. Beat egg whites stiff, adding the Tbsp of syrup slowly.
  6. Pile on pie and brown in hot oven.
  7. Sprinkle on chopped nuts, if desired.
