Nevada (Champion Chili)

This week in our study of the Western States is Nevada. The capital of Nevada is Carson City. Did you know the word Nevada comes from a Spanish word meaning “snow-clad”? How about a tasty recipe to try...



Nevada Champion Chili

INGREDIENTS:
3 med onions, diced
2 med green peppers, diced
2 stalks celery, diced
2 small cloves garlic, minced
8 lb ground beef
1 (7 oz.) can diced green chilies
2 (14-1/2 oz each) stewed tomatoes
1 (15 oz) can tomato sauce
1 (6 oz) can tomato paste
1 (3 oz) bottle chili powder
2-3 bay leaves
Tabasco to taste
2 Tbsp cumin
2 cans beef broth
Salt and pepper
2 cans kidney beans

PREPARATION:
Sauté onions, green peppers, celery, and garlic in large frying pan. Add ground beef and cook until browned. Transfer to large pot and add remaining ingredients. Cook about 3 hours over low heat, stirring often.
Serves 24 or more.

I guess you've notice this chili feeds a large crowd. I had to cut this recipe WAY down in order for it to be enough for us to eat some for dinner and some to put away in the freezer for another meal. It tastes really good on top of baked potatoes with all the good fixings. If you are from Nevada we would love for you to share a recipe with us to try.
