Easy Holiday Snickerdoodles and Fudge


Easy Holiday Snickerdoodles

Ingredients:
1 box of white or yellow cake mix
2 eggs
1/3-1/2 cup oil (melted butter would work too)
1 tsp. vanilla extract

Topping:
2 Tbsp. green decorating sugar
2 Tbsp. red decorating sugar
2 tsp. ground cinnamon

Directions:
Preheat oven to 350 - 375 degrees. Combine first four ingredients in a large bowl. A cookie like dough should form. In a smaller bowl combine the green sugar with 1 tsp. of cinnamon. In another small bowl combine the red sugar with the other tsp. of cinnamon. We used a Tbsp. measuring spoon to scoop out dough and rolled into balls. Roll the ball in one of the sugar cinnamon mix. Lay on cookie sheet and repeat making balls until you have filled up your cookie sheet (make sure they are at least 1" apart). Flatten the balls a little and bake for 8-10 minutes. Place on cooling rack and finish the process with any leftover dough. Makes around 34 cookies.



Easy Fudge

Ingredients:
1 can sweetened condensed milk
3 cups semi- sweet chocolate chips
1/4 cup chunky peanut butter (optional)
2 cups mini marshmallows
1.5 tsp. vanilla extract

Directions:
In a glass microwaveable bowl combine milk, chocolate chips, and peanut butter. Microwave in 15 - 20 second intervals until melted (stir between intervals). Stir in marshmallows until melted (may have to microwave 20 seconds to get thoroughly melted). Last add in vanilla and be sure everything is thoroughly combined. Pour into a foil or parchment lined square pan. Let cool (refrigerate) until chocolate has firmed. Cut into little squares and enjoy. I will try this recipe again changing up the flavor of the chips :)
