Iowa (Corn Casserole)

This week in our study of the Midwestern states is Iowa. The capital of Iowa is Des Moines. Did you know that Iowa is a major hog producer? Soybeans and corn are some of the top crops there. Since hogs and corn go together here's a recipe we found that we will be trying for dinner.

Iowa Corn Casserole

· 1 pound bacon, diced

 -1-2 cups bread crumbs

· 1/4 cup minced onions

· 1/2 cup chopped green pepper

· 2 cans cream style corn (16.5 oz. each)


Preheat oven to 350 degrees. Put diced bacon in skillet and fry until light brown. Remove bacon from skillet and set aside. Drain drippings from pan, reserving 2 tablespoons. Add onion and green pepper to drippings and saute until tender. Mix in corn and bacon. Place mixture into casserole dish. Sprinkle bread crumbs on casserole and bake for 25 minutes.

We ate this with some baked teriyaki pork steaks, corn muffins, and steamed broccoli. It was delicious. My hubby hates creamed corn. The bacon flavor won his approval and he ate 2 helpings of the corn casserole. If you are from Iowa please share a recipe with us to try.
