We are back to our 50 states studies. We are now learning about the Southeastern states. This week I will be posting the states we've already covered the last 2 weeks. First up in our study of Southeastern states is Tennessee. The capital of Tennessee is Nashville. Did you know I was raised in Tennessee all of my life? Yes I'm a southern girl...LOL Here's a recipe to try...

Tennessee Corn Fritters

2 cups freshly grated creamed corn
2 eggs, lightly beaten
4 heaping tablespoons flour
1 teaspoon baking powder
1 teaspoon salt
Freshly ground black pepper

Mix all ingredients together. Drop the batter by generous tablespoons into a very lightly greased nonstick pan. Cook like pancakes, about 1 minute on each side, turning once when lightly browned.

Serve with barbecued spareribs, salsa and sour cream, maple syrup or honey.

Yield: 2 dozen fritters.
