Idaho (Potato Pancakes)

This week in our study of the Western States is Idaho. The capital of Idaho is Boise. Did you know the Idaho comes from a Shoshoni Indian word that means "it's morning" or "the sun comes down the mountain"? Idaho is known for having the world's best potatoes. Since we're talking potatoes here's a recipe we tried…

2 c. leftover mashed potatoes
1/4 c. flour
1/4 c. milk
1 egg, beaten
1/4 c. onion, chopped
Bacon drippings or cooking oil
Salt & pepper to taste (optional)

Combine mashed potatoes, flour, milk, egg, and onions. Salt and pepper as desired. Form into 3 inch round patties and fry in bacon drippings or cooking oil. Brown on both sides. Drain and serve.

Potatoes are one of my favorite foods although I have to eat them in moderation ;-) We enjoyed these potato pancakes recipe. They are good with sour cream, ketchup, or you can top them with your leftover gravy if you have any on hand like we did.
